Meals I Can Make: Pink Popsicles
These pink popsicles are so fun on a warm summer day! They are made with only four ingredients, dairy-free and no added sugar.
Made with pitaya, a superfruit which is also known as dragon fruit. Our favorite organic frozen pink dragon fruit packets are from Pitaya Plus, which can be found at your local natural grocery store, like Whole Foods.
Pink Popsicles
Makes 10 popsicles
Ingredients:
1 can full-fat coconut milk (or approx. 1.5 cups of your favorite non-dairy milk like almond, cashew or oat milk)
2 frozen organic pitaya packets
1 ripe banana
2 tbsp hemp seeds
Fun additional option: coconut flakes
Utensils:
Popsicle molds
Popsicle sticks
Blender
Directions:
1.
In a high-powered blender, add milk, banana, and pitaya packets and blend well.

Add in hemp seeds and blend well again.
3.
Pour mixture into popsicle molds.
4.
Optional: add coconut flakes to the bottom of your popsicles.
5.
Place lid on popsicle molds, slide in popsicle sticks and place in the freezer overnight.
6.
Once popsicles are ready, take them out of the freezer.
Tip: To easily get your popsicles out of the molds, fill a large bowl with warm water and set the popsicle maker in the bowl usually just for a couple of seconds. They should then slide right out for you. Make sure also that the warm water does not come up over the molds but covers enough to loosen them up.
