Meals I Can Make: Orange Glazed Salmon

This is a super simple one-pan sort of dinner. One of those twenty minute meals you cook up last minute: make the sauce, add the salmon, and done. This pairs great with quinoa or brown rice and some broccoli!

Orange Glazed Pan-Seared Salmon 

Serves 4

Ingredients: 

4 salmon fillets 

1 large orange, juiced

1 tbsp honey 

1 tsp minced garlic 

¼ tsp sea salt 

1 tbsp avocado oil (or favorite high-heat oil)

1 tbsp fresh rosemary 

 

Equipment: 

10-inch cast-iron skillet (or whatever size skillet you have on hand, adjusting measurements if needed)

 

Directions

1.

Remove salmon from refrigerator.  Before cooking, use a paper towel to pat each fillet dry. 

2.
Allow salmon to sit until room temperature. 

3.
Sprinkle sea salt over the fillets. 

4.
Add oil to skillet and heat skillet over medium-high heat. 

5.
In a small mixing bowl, add orange juice and honey and mix well.

Place two fillets skin-side up, add ½ tsp garlic and cook for 4-5 minutes. 

7.
Flip fillets, pour ½ the amount of the orange–honey mixture on top of fillets, add ½ tbsp rosemary and cook for 2-3 minutes. 

8.
Remove from skillet. 

9.
Repeat steps 6-8 for remaining two fillets. 

10.
 Serve and enjoy! 
Optional: garnish with fresh orange slices for a refreshing bite of orange while enjoying the dish. 



    Notes: 

    *Great paired with quinoa. Also roasted carrots, asparagus and steamed broccoli
      *Cooking tip for quinoa: use chicken or vegetable broth instead of water.
