Meals I Can Make: Gluten-Free Strawberry Waffles

This is such an easy and fun recipe to make for Valentine's Day. I love including the kids in making our Valentine's Day brunch fun. They love to crack the eggs, use the spoons to mix and pour the waffles. Adding in some pink sprinkles makes it even more fun.

 

Ingredients

1½ cups almond flour 

3 tbsp coconut sugar 

1 tbsp flaxseed 

1 tsp cinnamon

1½ tsp baking powder

¼ tsp sea salt

1 cup unsweetened vanilla almond milk

1 tsp almond extract

½ tsp vanilla

1 large organic egg (lightly beaten) 

2 tbsp coconut oil, melted

1 cup sliced & cubed organic strawberries 

Sprinkles (optional)

Fun optional waffle toppings: mini heart-shaped strawberries (you can use a mini heart cookie cutter to make these), edible flowers, organic powdered sugar or melted chocolate.

 

Directions

Add almond flour, coconut sugar, flaxseed, cinnamon, baking powder and sea salt to large bowl and mix together. 

Stir in almond milk, almond extract, vanilla, egg and melted coconut oil. 

Using a hand mixer, mix together until a nice consistency.  The dough will be a bit thicker and not as liquid as some waffle mixes. 

Fold in the strawberries (and sprinkles if you wish). 

Using your waffle maker, make your strawberry waffles.  A heart-shaped waffle maker is a great option that’s perfect for this month’s sweet celebrations. 

Fun optional waffle toppings: mini heart-shaped strawberries (you can use a mini heart cookie cutter to make these), edible flowers or organic powdered sugar.  You can also drizzle melted chocolate on top.
