Spring Time Cupcakes

Treats are always a big hit in our house. I love bringing the whole family together in the kitchen to bake… or let’s be honest, to decorate baked things.

This year we celebrated our little Birdie by making Birdie’s Nest cupcakes- chocolate (Max’s favorite) with vanilla buttercream frosting, coconut and mini Cadbury eggs (LOTS of Cadbury eggs were eaten during the making of these cupcakes). PS if you don’t feel like baking, just buy some cake mix, some premade frosting, and make the fun of the project the decorating and not the baking. 

Super Moist Chocolate Cupcakes

 Ingredients

3/4 cup organic unbleached all purpose white flour
1/2 cup raw cacao powder (original recipe used unsweetened natural cocoa powder)
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt
2 large cage-free organic eggs
1/2 cup organic granulated sugar
1/2 cup coconut sugar (original recipe used light brown sugar)
1/3 cup melted coconut oil
2 tsp pure vanilla extract
1/2 cup buttermilk, at room temperature

Vanilla Buttercream 
Frosting recipe:

 Ingredients
 

3/4 - 1 cup organic unsalted butter softened
4 - 5 cups confectioners' sugar
1/4 cup organic heavy cream
2 tsp pure vanilla extract
sea salt, to taste
 
* Readers can also purchase frosting at the grocery store if they prefer.

Birdie nest toppings:
Frost cupcakes, sprinkle coconut flakes in the shape of a nest and add pastel Cadbury mini chocolate eggs.
