Meals I Can Make: Shamrock Pancakes

I love getting creative in the kitchen (when it's easy!). Celebrating Saint Patrick's Day with these Shamrock Pancakes puts everyone in our household in the Irish spirit! These are made with minimal ingredients, are healthy, and are done in minutes- a win all around!

Shamrock Pancakes

Makes 12-15 green pancakes.

Ingredients:

1 banana
2 eggs
1 tsp vanilla
1 tsp cinnamon
2-3 handfuls spinach

Directions:

1.
Blend banana, eggs, vanilla and cinnamon in blender and blend well.
2.
Add in spinach and blend until the spinach is completely blended, and it becomes a creamy green pancake batter.
3.
Grease pan with coconut oil.
4.
Cook your pancakes over medium heat.
5.
Optional: top with whipped cream, fresh berries and pure maple syrup.  Also, powdered sugar with chocolate chips is a great combination as well.
