Meals I Can Make: BBQ Chicken Salad
We love a big healthy salad for lunch during the summertime. This is a tried and true JS Girls favorite- BBQ Chicken Salad with Ranch Dressing!
BBQ Chicken Ranch Salad
Serves 4 people
1 bag mixed greens
2 romaine hearts, chopped
1-2 cooked chicken breasts, shredded
½ cup of your favorite BBQ sauce
1 cup mixed medley cherry tomatoes, sliced
½ heaping cup canned black beans, drained and rinsed
½ heaping cup canned corn, drained
1-2 avocados, sliced
½ cup tri-colored tortilla strips
Your favorite ranch dressing
Optional: sliced onions and/or shredded cheese
First an easy and quick way to make the shredded chicken: heat a pan on medium heat and add a drizzle of avocado oil (or your favorite cooking oil). Add chicken breasts. Season with salt and pepper. Cook on one side for 4 minutes, flip and cook on other side for 4 more minutes. Add 1 cup chicken broth, cover with lid for approximately 10 minutes or until cooked thoroughly. Remove the chicken breasts and use two forks to shred the chicken.
After shredded chicken has cooled, place in a bowl and stir in BBQ sauce. Mix well, coating the chicken evenly.
In a large salad bowl, add mixed greens and chopped romaine hearts.
Next, add BBQ chicken, cherry tomatoes, black beans and corn.
Top with tortilla strips, avocado and cilantro.
Drizzle ranch dressing over salad.
Serve & enjoy!
